When you haven’t had the chance to use up all of your VegeBox Indoor Garden homegrown herbs rather than leaving them to rot in the bottom of the fridge you could dry them for later use. It's very simple and saves you money. Reuse those little jars over and over again.

If you don’t have a garden or patio you don’t have to worry about not being able to dry your herbs in the sun. It is quicker to use your oven or even better a food dehydrator which can be used to dry many other foods at home.

Oven Drying
Place the herbs leaves on some baking paper on your oven tray one inch deep or less.
Place tray in oven on a low heat - less than 80 degrees celsius for 2 to 4 hours. The herbs are ready if the leaves crumble easily.

Food Dehydrator
Most dehydrators have a timer so you can safely leave your herbs drying when you are out. You can dry many different herbs at the same time depending on how many trays you have. It usually takes around 4 hours and as with the oven the herbs can be stripped from the stems and stored immediately.

Making your own seasoning....

Example of a Classic Italian Mix

2 tablespoons dried oregano
2 tablespoons dried basil
2 tablespoons dried thyme
1 tablespoon crushed dried sage
1 teaspoon dried rosemary

Your seasonings can be used for making dips, adding flavour to salad dressings or use as an oil based or dry rub on roasting meat or vegetables.

Storage
To store your homemade herb mixes use glass or plastic with tight seals or reuse the ones you already have from your store bought herbs. No seasoning flavour will last forever so keep them in a dark, dry place and store for about 6 months. Use ornamental glass jars for a lovely gift idea.

Herbal Home Remedies

When we buy herbs, dried or fresh, from stores we rarely know how the plants were raised, how long they have been kept or what they have been exposed to. Grow your own in your VegeBox to ensure the best quality and potency of your herbal remedies including homemade tinctures and soothing teas.
