Light weight, rust proof, sharper for longer & reduce oxidisation in food
The blades of the ceramic knives are made from zirconium oxide, a very tough and hard type of ceramic. Ceramic blades will also greatly decrease the oxidisation rate of food, meaning produce won't brown as quickly. When minimal oxidation occurs maximum nutrients and living enzymes are retained in the food. A ceramic blades will also be resistant to absorbing smells and tastes from foods, so a simple rinse under water will suffice in between even the most pungent ingredients.
