What is Living Juice?

The concept of living juice was first introduced by Dr. Norman Walker (1886-1985) who invented the original cold press juicer in 1934 known as the Norwalk. Dr Walker discovered that enzymes and nutrients in fruit and vegetables perish at temperatures which exceed 50 degrees Celsius.

Tests performed claim that non-centrifugal juicers produce juice that lasts longer and contains more nutrients. These tests showed that the juice from cold press juicers contains more nutrients; and in fact the Hippocrates juicer by Greenpower contains well over double the beta-carotene and alpha-carotene than the juice from every other juicer in their test… and it lasted longer.

Juice from non-centrifugal juicers tends not to separate, smells fresh and looks palatable even after 48 hours in the fridge, indicating less oxidation.

With a cold press or living juicer, the auger turns slowly at 75 - 160 revs per minute (RPM). The crushing and squeezing action mimics our own chewing action by correctly breaking open the cell wall, releasing the nutrients and organic water content while expelling the insoluble fibre.

    That's a great question!

    Basically as a simple answer, when you’re serious about your health, consuming the highest quality, nutrient dense foods should be your first priority and something not to be compromised.

    Cold pressed juicers operate at lower speeds (usually around 70-80 RPM), keeping heat generation to a minimum. Compared to a centrifugal juicer which operates at a high speed and incurs friction heat. As a result a cold press juicer not only produces a superior tasting juice with minimal foam and separation, but it also means that the beneficial enzymes and nutrients are retained. This is where all the goodness is!

    Nutritional tests* (between a cold press and centrifugal juicer) revealed that cold press juicers extract up to 42% more vitamin C, up to 60% more vitamin A and yield between 35 - 50% more juice. These test results are from Michelson Laboratories,Inc., Korean Food Research Institute (KRFI), and internal labs.

    Hi I was just wanting to know the speed as in I'm really sold on cold press but I'm wanting to know the time like if I put a centrifugal side by side with a cold press who'd fill the glass quicker and for arguement sakes just say they were your average from both types of machines and loaded at the same time etc. Thanks a lot.

      Hi Marc,

      In terms of RPM's (Rotations per Minute), a cold press juicer runs at 60-160 RPMs where as a centrifugal juicer runs at 30,000 RPMs. With this in mind you can understand the process of juicing is a little slower with a cold press juicer and the feeding chute is a little smaller. It does though depend upon the produce being juiced and the model of juicers.

      As an estimate, if all fruits and vegetables were prepared and ready for juicing:

      Cold Press Juicer - Approximately 3 minutes

      Centrifugal - 1-2 minutes

      However, the time taken to clean the juicer does come into play also:

      Cold Press Juicer - Under a minute

      Centrifugal - 5 minutes

    I was hoping to get some more sources of your information. I recently swapped my centrifugal for a cold press (using the Bella NutriPro) and am curious about how and why the cold press is better quality juice. I read your response above but after following your link it took me to a site that was extremely biased (they were selling their cold press juicers). I think I could find "research" stating centrifugal juicers are great if I went to a site like Jack LaLane. I believe cold press juicers are better, especially since I own one now, but I want to see the research. Any help would be appreciated. It's been very hard to find this information!

    I'm starting a company to help people to change their eating disorders. I create a detox program. Unfortunately I haven't found the correct cold press. I will like to get a recommendation. Can you help me to find a semi industrial cold press that handles at least two hours of continuing usage? My budget is $400 for each cold press.
